Palate : Soft, rounded sweet potato flavor (kogane sengan yam is commonly used) Light sweetness rather than sugary sweetness—more like “cooked root vegetable sweetness”
Finish : Clean and relatively dry for an imo shochu,Faint peppery or herbal fade,Lingering earthy sweetness rather than alcohol heat
